Frontenac

Frontenac is an hybrid grape vine that is a result of research and cross-breeding very cold hardy selection of Vitis riparia by the University of Minnesota. It was released in 1996.

Frontenac gris is a white wine version of Frontenac, introduced in 2003. It started as a single bud mutation of Frontenac, yielding gray, fruit and amber-colored juice. Frontenac blanc will be introduced in 2012 from white fruited mutations found in both Frontenac and Frontenac gris vines in Minnesota and Canada

Frontenac has been used for the production of dry red wines, rose, as well as for fortified wine in the style of port. . .

Sherry Jerez is a matured wine

First of all, you should know that Sherry and Sherry mean the same thing

sherry "comes from the Arabic" sherrisch "which is used in France and in the Anglo-Saxon countries.

A Sherry cask can contain between 480 and 520 liters of spirits compared to 180 liters for a Bourbon cask.

Jerez are wines that are mutated or vinified by adding grape brandy with an alcohol content of 95 °. Mutage takes place at the end of alcoholic fermentation.

One of the first peculiarities of some Jerez is therefore that they are dry wines, because all the sugars in the berries have been transformed into alcohol.

The grape varieties: Palomino, Fino, Moscatel, Pedro Ximenez, these last two are mainly used in blending, but sometimes alone also, in sweet wines.

After harvesting, the bunches are left to dry for one or two days in a place called "almiar".

Some wines will then be aged for many years according to the solera system which slowly oxidizes the wine. A method that is also found in the Jura for yellow wine or even for certain champagnes ...
