Détacher la chair de la queue de langouste par-dessous sans abimer la coquille et la couper en une vingtaine de tranches minces que l’on décore de truffes et nappé de gelée. Dresser la carapace de la langouste sur un socle de riz façonné en plan incliné et recouvert de feuilles de laitue.
Remplir de salade de légumes la queue de la langouste vidée de sa chair, et disposer tout le longdu dos du crustacé les tranches de queue chevalées l’une sur l’autre.
