Sherry Jerez is a matured wine
First of all, you should know that Sherry and Sherry mean the same thing

A Sherry cask can contain between 480 and 520 liters of spirits compared to 180 liters for a Bourbon cask.
Jerez are wines that are mutated or vinified by adding grape brandy with an alcohol content of 95 °. Mutage takes place at the end of alcoholic fermentation.
One of the first peculiarities of some Jerez is therefore that they are dry wines, because all the sugars in the berries have been transformed into alcohol.

After harvesting, the bunches are left to dry for one or two days in a place called "almiar".
